Apple and Blackberry Pie

Today was a dull rainy day so I decided to spend the day inside baking.  I chose to bake an apple and blackberry pie.  I have never made a pie before but have owned a pie dish for 3 years, so thought I would give it a go.

If you have read some of my previous baking posts then you will know that I’m not very good at making pastry so again I used shop bought, ready to roll pastry.  I decided to use shortcrust pastry for the base and puff pastry for the top.

To start I peeled, cored and chopped up 3 large Bramley apples and added these to a pan with 6 tablespoons of water. I simmered these down until soft before taking off the heat, adding some lemon juice, sugar, butter and blackberries. While this cooled I lined my pie dish with shortcrust pastry and then poured in the filling.

I then put the lid on my pie, added a bit of decoration and glazed it with milk before baking it at 200°C for 25 minutes.

I was rather proud of the way it turned out.  I think it looked quite good and it tasted really good too! I served this warm with Vanilla Ice Cream.
